A Lion's Share of Lunches

Welcome to day two of an all animal week thanks to our recent trip to Columbus Zoo & Aquarium. I don't know what I was thinking, though. The pressure of specific posts and deadlines? Well, let's just say we don't get along. But, we made out okay today, and the animal of the day is the LION!

Watermelon, green and orange bell peppers (from our garden finally), ranch in container, sesame sticks, Trader Joe's chewable vitamin, and a lion peanut butter sandwich with sharp cheddar.

Here's some fun facts that we picked up about the African Lion!
*The African Lion has the biggest brain of all the 'big' cats.
*Lions are the only big cats that live in social groups or prides.
*Lions often sleep 20 hours or more a day (what I wouldn't give to be a lion some days)
*The roar of a lion can be heard from 5 miles away!

A Herd of Elephants

I'm finally nearly partially fully rebounded from our mini family vacation. Would you believe we're entertaining the thought of another even mini-er (is that a word?) one before Labor Day? What am I thinking? Anyways, while I'm far from going through the mounds of photos I took, I was thinking about a week dedicated to one of the major activities on our trip, The Columbus Zoo & Aquarium. Why not do a week long theme of some of the animals we saw? My daughter's favorite? Well, that will have to wait until Friday, but it isn't one of the 'usuals' at the zoo, for sure.

Today's animal? The ELEPHANT! The Columbus Zoo has Asian Elephants, and there was quite a bit we learned about them, including a fun fact on our Lunchbox Love Notes, too! Keep an eye out... we'll be having a Lunchbox Love review and giveaway very soon!

Elephant sandwich with Boar's Head turkey, swiss, and spinach on a bed of more spinach, blueberry Greek yogurt (how to make yogurt 'cut-outs'), apples, grapes, Trader Joe's honey roasted peanuts, cucumbers, and tomatoes straight out of the garden.

Here's some more fun facts that we picked up about the Asian Elephant!
*The Asian Elephant is more closely related to a Mammoth than the African Elephant.
*An elephant only has a set of 4 molars (although the tusk is a modified incisor), and as they wear down, the molars are replaced in a conveyor belt fashion, but only 6 sets of molars will ever come in during an elephant's lifetime.
*The elephant actually walks on it's toes (the heel of the foot is just a pad made of fat and connective tissue), something they share in common with my tiptoe walking daughter.. sigh...
*Baby elephants are born weighing in at around 250 pounds, and adults can range from 7,000 to a whopping 16,000 pounds.
*One of the biggest difference in appearance between Asian and African elephants is their ears. In Asian elephants, they are shaped like the sub continent of India. While, African elephants much larger ears are shaped like the continent of Africa. Go figure.
*Asian elephants are endangered, and sadly, the biggest threat to them is humans.

Fun with Yogurt

You really can have fun with yogurt! Sure, you could just eat it as is or with some fruit and nuts, but you can do so much more with it, so why wouldn't you? Don't get me wrong. Add-ins are one of my favorite things to use, and, of course, there are hundreds of fantastic recipes with yogurt, but that's not what this is all about. This is more on the 'playing with your food' line of thinking. For yogurt, usually all you need is a mold and a freezer, and you have struck the creative goldmine. Anything is possible! Nearly anything, at least!

*TIP*
The first tip I have for you is to use Greek yogurt or whole milk yogurt. Our personal favorites hands down are Brown Cow Cream Top and Chobani, but Stoneyfield YoBaby or YoKids work good too. Not only are they the most delicious (don't even attempt to argue otherwise), but the thicker, richer nature of them tends to work best when 'playing' around. And, the taste? Um, yeah... did I mention they are THE best! Also, though not a requirement necessarily, we try to steer clear of those brands with added color, fake flavors, thickening agents (the shame, the horror), and the worst in my opinion, the artificial sweeteners. Gag..

So, you have your yogurt. Now what? My 'tool' of choice is a silicone ice tray. They come in so many shapes and sizes, so you really can get nearly anything you might want to look for. Seriously, you can google just about any shape along with 'ice mold' and you'll find it. Okay, don't search for any shape. I know what you're thinking, and it's there, too. You've been warned! If you want a bit more family friendly place to start, try Fred brand on Amazon (TJ Maxx and Marshalls often have them too), check your local crafting store, especially around the holidays, or stores like Bed, Bath, Beyond. We have Meijer grocery stores local to us, and they even have lots of fun molds. You can also use plastic candy molds, but popping the yogurt creations out can be a bit trickier, and depending on quality, the mold may crack in the freezer. Just saying. But, I'll get to that.

Another option is just using a mini cutter on frozen yogurt puddles. That's about as fancy as you can get, right? To do this, you literally just put a piece of wax paper on a small, flat surface like a little cutting board, and blop some yogurt on top. Freeze your yogurt puddle long enough to harden and cut out the shapes you want to use. Then, peel off the wax paper, and you're done! It's that simple. You can also add sprinkles or colored sugar if you like, but I suggest adding it before the yogurt goes in the freezer. The sprinkles will stick a lot better because the yogurt is still wet.

Flower Power

A quick and simple lunch was in order today. This mama is still catching up on laundry, housework, and life in general. Remind me next time that after you take a vacation, you come home to what seems like double the work until things fall back into place. Thankfully, it's just about done.

This Little Heart of Mine

One of these days I'll get to sorting out vacation pictures. In the meantime, just a fun little lunch today for the kid that has my heart. I know I'm the mom. I'm supposed to say nice things, but she really was so incredibly good on our trip. I really thought that my 4 1/2 year old would be a handful with long days of travel, even longer days of activity (without naps most of the days - yes, she still naps thank goodness), and a complete disruption from the normal routine. Nope! She embraced every part of it. It just makes me want to turn around and take another trip. This time is so precious. I wish I had more of it. Don't get me wrong... there are some days I most certainly do not, but for today, I surely do.

Leftovers for Lunch

So, we're home from out adventure, and what a wonderful time we had. This was our first proper family vacation ever, so I think we did pretty good. Columbus was good to us, but we needed a couple more days to do the things we wanted to do. We missed the art museum and botanical gardens, and never did make it to get ice cream at Jeni's or meet up with a couple bloggers in the area, but we did do everything else we hoped to do and had a great time. Next time! However, I'm far from organizing a single photo to post just yet. I'm still too bogged down with what feels like 50 loads of laundry and putting things away, not to mention the regular routine of work in and out of the house. Ah, to be home...

Since I can't seem to get anything new together to post today, here's some leftovers from last week.. literally, leftover lunch! One of the favorites for leftovers is spaghetti. We always make way more than we need for dinner, then the next day, the noodles can be eaten with butter and grated cheese, or with some pesto, garlic and peas, or serve the traditional way with spaghetti sauce, of course. I the oddball, and actually like my leftover noodles cold, so there's always that option too.
