Snack Time

So, I was fiddling around on Pinterest again. At this rate, I'll get through my 'must try' list sometime before my ninety's. Ugh. Anyways, after a semi-failed attempt at some crazy veggie chili with cocoa and cinnamon in it, I found some hope in a delicious, simple corn bread, so be sure to take a peek. It can never compare to homemade, but I think it is my new favorite when it comes to using a premix. And since today, we had lunch at a proper restaurant, I'm sharing our snack for the day.

Cucumbers, cherry tomatoes, brown rice crackers, havarti cheese, and smoked turkey.

Jiffy corn breadJiffy Corn Bread
Ingredients - 1 box Jiffy corn bread mix, 1 box Jiffy yellow cake mix, 2 eggs, 1/2 cup water, 1/3 cup milk

Mix all ingredients together until just combined. Pour into a greased square baking pan.  Bake at 350 degrees for 30-35 minutes until golden and a toothpick comes out clean. Cut and enjoy!

Panda-wich

Today's lunch featured pandas... obviously. We used our CuteZCute cutter to make the panda sandwich, of course. And what is up with that seaweed? Is anyone else's kid addicted to this stuff? Don't get me wrong, it is unique and delicious, but I can't keep the stuff in 'stock' at home long enough to enjoy it myself. I open a package, and it's gone before I know it. I've tried a couple other brands, but the Trader Joe's one is the keeper. Yum!

Simple Pleasures

I love our Target store. Really, I do. This little box was in the $1 bin last year when they featured all their Seuss stuff. Simple, cheap, cute, and convenient.. This lunch came along with us on some of those catching up sort of errands today, Target being one of them. Sometimes, lunch has to be on the run for me to get things done. Even though the kiddo is almost 4, she still takes a nap religiously every afternoon, so I still have to plan around it. Believe me, I'm not complaining! I can't imagine NOT having that kid-break in the afternoon, so I'll deal with the 'scheduling' for as long as possible.

Travel Lunch

I feel like I'm still playing catch up since the holidays, and in some things, I'm excelling, and in others, I'm way behind. Unfortunately, the two are backwards from where they should be. So, today, was about running some errands (and dragging the kiddo along for the ride). Luckily, lunch was easy to pack and bring along. I may have snagged one of those mini candy bars before passing the lunchbox over, though. I used one of our Fit & Fresh for the trip. It's nice because it has a built in ice pack on the interior of the lid, so everything stays cool.. not that I have to worry about that in Michigan in January, but still.. nice feature.

A Touch of Spring

It is not just cold here, it is frigid.. like the kind of cold that you eat crackers and cheese for dinner to avoid going out to the grocery store. Here I was, pulling out a snowflake cookie cutter and a snowflake pick, and I got goosebumps just thinking about the wind chill! Plan B. What I wouldn't give for a lovely mild, spring day right now. Well, if not outside, why not inside? So, that was that. Butterfly lunch it is! I hope you all are staying warm and snug!

Happy New Year 2013

I hope everyone had a wonderful New Year's Day with family and friends, or at least doing what you love. So far, it's been a great year for us. Okay, so it's only been a half a day in or so, but still. It's a nice thing to say, and I hope to continue the sentiment long into the year. I'm determined this is 'my' year. It's the year of the snake, and since I'm a September babe, that's me!

I don't typically make resolutions. I think about making them, then either feel too much pressure to complete them or a failure for not. So, no resolutions this year. But, what I will do this year is try and relax. I don't mean that I'll quit my job or stop cleaning the house or let the kiddo eat candy for breakfast. What I do mean is that I will try to pay attention to what really matters and enjoy those things over all else. I feel like if I can remember that rule, the other things I want to accomplish fall into place a little easier too.
