Sub-stitute Sandwich

In my recent obsession with wraps, I realized that there are, of course, other alternatives to sandwich bread besides the wrap. My personal favorite is the croissant, but I'm convinced they have some sort of magical property that starts to turn them to stone once I remove them from the bakery. I can eat a delicious, flaky, buttery soft croissant that day, but the next day? The soft sloping edges are now concrete slabs,  but I give in because the center still yields and tastes amazing. The day after that, though? They're tossed into the yard for the woodpeckers to have a go at. Sad. Anyways, I digress. The sub roll. Yum! This one got packed for the hubby.

Butterfly Bento

Sometimes, most times even, lunch is pretty simple around here. But, put that lunch in a cute box, and the transformation is instant. And, what better to represent transformations than a butterfly, right? Speaking of butterflies, we finally ordered ours. I forgot to order was waiting for the perfect time to order them, and with summer finally in full swing in Michigan, it seemed about that time. Last year, we ordered ladybugs and a praying mantis egg case along with the butterflies. That was a lot of fun, too. I'd love to find walking sticks, though. They are my favorite!

Wrapped Up Pizza

I've been playing around with some new variations on the traditional 'wrapped' sandwich, and today did a pizza wrap for the hubby. It would be really fantastic with some bell pepper, black olives, and mushrooms. I'm finding that a tortilla or flatbread can be made to transform nearly any favorite flavor combination into a fun, unique lunch. Plus, there is so much versatility in a flatbread. I'm thinking Naan bread with hummus, roasted red peppers and feta cheese or an oriental chicken salad wrap next. Hey, isn't a burrito just a wrapped up Mexican feast, too? Yum!

The top tier has a whole wheat wrap with tomato paste, turkey pepperoni, and mozzarella cheese, and vanilla Greek yogurt in the container. The bottom tier has bell peppers, celery, watermelon, cantaloupe, and a chocolate treat.

Accidental Rainbows

I love it when this happens. A simple lunch that was made to use up odds and ends in the fridge ended up being a rainbow of colors. Better yet, much of it is local from the farmer's market. Pretty soon, we'll be harvesting out of our own garden, too. That is always an exciting time of the summer. Now, if only a rainbow would come out in the sky. There has been far too much rain and cloudy skies (not to mention all that humidity) lately. Time for some more sunshine, for sure!

Back To Work

While many folks are off on a holiday weekend break, the hubby had to work today, and we have no plans to fight traffic on a Friday night. That means that we're staying home and finding fun in town. Seems like a zoo day today to me! But, since he'll (hubby) be working, at least he has a little bit of the holiday for lunch!

Happy 4th of July

I think I may actually.. sort of.. be ready for today. I managed to whip together a poke cake last night. I have to say I love them for how easy, moist, delicious and versatile they are. Thank goodness for that. We also made some of our homemade gummies again, this time using a silicone ice mold rather than a chocolate mold. They turned out great! Whatever treats and fun you have planned today, have fun and enjoy. Look out 4th of July, we have bang snaps and sparklers!
