Seems this one has variations out there all over the place. I tried to follow links to find the original but could not. So, I decided why not make it my own original and continue to play with the recipe I've seen floating around here and there. It was a great first success, but it is clear that this recipe can be adapted to fit anyone's tastes or health needs. Try a different nut butter than peanut.. use agave nectar instead of honey.. add dried fruits.. use just flax or just wheat germ.. chocolate, carob, butterscotch or any kind of chips.. coconut or not.. toasted or not.. the possibilities seem endless!
Either way, it's simple and delicious. This is how we made ours!
No Bake Energy Bites
Ingredients - 1 cup dry old-fashioned oats, 2/3 cup toasted sweetened coconut flakes, 1/2 c smooth peanut butter, 1/4 cup ground flax, 1/4 cup toasted wheat germ, 1/2 cup mini chocolate chips, 1/3 cup honey, and 1 tsp vanilla.
Mix all the ingredients together in a bowl. Let chill in the refrigerator for at least 30 minutes. Then roll into balls whatever size you'd like. I varied the sizes for the adults and child in the family. Store them in a covered container in the fridge. I understand they keep about a week, but ours were long gone before that anyways. We made about 25-30 balls of varying sizes from this recipe.
