Recipe Review - Apple Kuchen

Happy Birthday to me, Happy Birthday to me... What shall I bake? Apple Kuchen for me! This is a family favorite, since we are of German roots. I'm sure it's not a traditional version, but it's the one we've always made as far as I can remember, and it is delicious!

Apple Kuchen  

Ingredients - 1/2 c butter (room temp), 1 pkg yellow cake mix, 1/2 c shredded coconut, 2 1/2 c sliced apples, 1/2 c sugar, 1 tsp cinnamon, 1 c sour cream, 1 egg

Mix butter and yellow cake mix by hand (wash those hands first!!) or with pastry cutter until crumbly. Add coconut. Into ungreased 13x9 glass pan, press the mixture on the bottom, and slightly up the edge. Bake 10 minutes at 350 degrees.

While it is baking, toss apples with sugar/cinnamon mixture, and, in a separate bowl, mix together sour cream and egg. Arrange apples over the warm cake crust when it is pulled from the oven. Then drizzle the sour cream/egg mix over the apples. It may or may not cover all the apples, but it's fine either way. Bake another 25 minutes until edges brown and sour cream/egg mixture is just set.

Serve warm or cold on it's own, or serve with vanilla ice or homemade whipped cream. YUM!

  2. Not long.. really. A couple cleverly placed picks or dividers, and a cookie cutter are sometimes all that's to it! More than anything, I just have fun with it.
