Back To Work

While many folks are off on a holiday weekend break, the hubby had to work today, and we have no plans to fight traffic on a Friday night. That means that we're staying home and finding fun in town. Seems like a zoo day today to me! But, since he'll (hubby) be working, at least he has a little bit of the holiday for lunch!

Happy 4th of July

I think I may actually.. sort of.. be ready for today. I managed to whip together a poke cake last night. I have to say I love them for how easy, moist, delicious and versatile they are. Thank goodness for that. We also made some of our homemade gummies again, this time using a silicone ice mold rather than a chocolate mold. They turned out great! Whatever treats and fun you have planned today, have fun and enjoy. Look out 4th of July, we have bang snaps and sparklers!

Ready For the 4th?

Wait?! It's the 4th of July tomorrow? Really? REALLY? How did I miss that memo? My head is still stuck back in May. I'll blame it on the weather... and jello... Either way, I feel like I'm scrambling to figure out our 4th celebration this year. I'm certainly faced with grocery store madness the night before and working out a simple dessert. Did someone say Poke Cake? It will have hand picked from the yard fresh berries on top, though. I really need to start planning things out a bit better. At least, lunch is covered!

The Impossible Girl & The Impossible Pie

So, it's no souffle, but it is the Impossible Pie. Somehow, this super simple watery batter becomes a light, yet coconutty, custardy pie, even making it's own crust in the baking process. All that, and the recipe fits on a sticky note. Beat that, souffle!

Ingredients - 1 stick melted butter, 1 3/4 c sugar, 4 eggs, 1/2 c flour, 2 c sweetened shredded coconut, 2 c milk (Just a note that it is SUPER simple to split this recipe in half to make 1 pie, but why would you want to do that?)
Preheat your oven to 350 degrees, and butter 2 pie plates. We used 9" ones.
Mix together the butter, sugar and eggs. Add in the remaining ingredients and stir to combine. Divide the batter between the 2 pie plates.
Bake in the lower 1/3 of your oven for about an hour, or until golden and just firm to the touch. Let cool before serving. You can make this pie ahead and refrigerate overnight, but I think it's best at room temp, so a bit before serving, let it sit out of the fridge to take the chill off. Slice and enjoy!
You can serve it as is, which is delicious, or serve with a bit of whip cream or fruit. Up to you.

K Is For Kitty

As part of our projects at home and alphabet lunches, we featured the letter K today. I even bought kumquats, but do you think I could get anyone to eat them? Um, no. But, now I know that they are fantastic cut up in a pitcher of water or a tall glass of iced green tea.
We also took this opportunity to make kale chips. We have been picking up a beautiful bunch of it every week at the farmer's market, so I figured we should give them a go. They turned out great, so we are sharing our method.

Kale Chips
Ingredients - 1 large bunch of kale, ribs trimmed and chopped roughly, 1 Tbsp olive oil, 2 tsp soy sauce, salt and pepper to taste
Toss the kale with all the ingredients. Spread on a rimmed baking sheet. Bake for about 8 minutes, tossing halfway through cooking time, at 375 degrees.
The pros? An easy, delicious, healthy, crunchy snack. The cons? Where the heck did all my kale go? I had a big beautiful pile of it. Now I have a couple of handfuls of dried bits. Hmpf.
