Kindergarten St. Patrick's Day

Make a green snack for Kindergarten the teacher says, so after narrowing down the green choices with the kiddo, we have lunch and snack fit for the occasion. I really hadn't thought about all the food choices that are green, and there sure are a lot of them! It took some convincing that she didn't need a bite of EVERY green food she came up with. I think I'd need a bigger lunchbox, for sure.While the kiddo has fun in school, mama will be celebrating with some Guinness cupcakes! Bailey's buttercream, anyone? St. Patrick's Day

Other than a shamrock shaped pancake or sandwich, we don't really celebrate or do anything for St. Patrick's Day. But, that's good enough for me. We also found some fun themed projects at 3 Dinosaurs and did green pepper shamrocks again. Whatever you're up to, don't drink too much green beer, but have fun this weekend! For me, it's about rapidly shifting gears from birthdays and the color green to Easter, which seems to be right around the corner. How did that happen? Decorations are down and ideas are forming. I am so looking forward to Spring!

For hubby's lunch - Whole Food's spinach empanada, green grapes and kiwi, green bell pepper, cucumber, Wholly Guacamole packet, Whole Food's sesame tofu and roasted Brussels sprouts, Angry Birds graham crackers with a hidden gold chocolate coin, cheddar mozzarella stick, and Trader Joe's dried coconut strips with a homemade gummy in the container.

And here are some of the projects we did from 3 Dinosaurs. In the first group, we used paints, Do-A-Dots (love those things), and crayons to complete them. The second group was taping, pasting, matching, tracing, and then we used the sheets intended for writing sentences to just write the words. First, we used stamps in upper and lower case letters, then kiddo wrote the words herself!

Shamrocks

While I'm more in the mode of prepping for my hubby's 40th birthday tomorrow, I realized I hadn't done any sort of St. Patrick's Day themed lunch yet, so today's the day. I made homemade gummies again, this time using lime Jello. I would still like to try these with real fruit juice, and also try a version that is vegetarian, but for now, these are quick, easy, and cute.

Vanilla Greek yogurt w/ green sprinkles and a homemade lime gummy, grape tomatoes, green and yellow bell pepper shamrocks, multi-grain bread, provolone cheese, mixed nuts, and under the pot of gold is a pot of golden raisins with a gold chocolate coin tucked behind.

The little green cup that holds the raisins in this lunch has an embossed shamrock in it. I found that these little cups made the perfect mold for the excess gummy mixture I had made up. I think they turned out pretty neat, don't you?

Happy St. Patrick's Day

I've seen this one on multiple sites, so had to give it a go myself. What a great project this is! Not only is the activity fun and the results awfully cute, but you can eat the leftovers! It seems like a winner to me. We always used to do potato stamps, but this is so much fun too. Maybe it would be a neat idea to use multiple veggies to stamp with and later make a potato salad out of them. Hmmm..

Although, we snacked pretty heavily on the bell peppers, we still did manage a more proper lunch for St. Paddy's Day later on.

Avocado, Shamrock sandwich with sharp cheddar cheese and smoked turkey with mustard, Lucky Charm's marshmallow hats, cucumber, lime Jello with whipped cream and green grapes.

It's Easy Being Green!

Since it is St. Patrick's Day weekend and I've done other colors, green seemed the logical next one to do. My biggest issue was figuring out what NOT to include. My daughter eats nearly anything green, so maybe this would be a good one to do in a muffin tin so I could include a bigger variety, but smaller volumes. Maybe next time..
